Yields are kept moderate at 45-50 hl/ha for whites and 35 hl/ha for reds. The winemaking process involves pneumatic presses, natural yeasts, aging in 20% new French oak for 12 months, and careful fining to achieve elegance and ageability. A fastidious 30-month process from vine to bottle using high-end equipment results in wines reflecting the passionate family team s efforts, with the next generation poised to take over the venerable domaine committed to crafting Burgundies meant to be enjoyed. The traditional method starts with hand-harvested grapes pressed pneumatically to separate press fractions. The juice ferments in stainless steel after settling. Once fermentation completes, the base wines are blended, bottled with sugar/yeast for secondary fermentation creating the mousse. Bottles age sur lie at least 12 months at 12-15°C, then are riddled, disgorged, and a liqueur d expedition is added before corking. The wine shows a brilliant pale color with a fine perlage. The expressive nose offers white fruits like apple and citrus, fresh herbs, ripe pear, quince and ginger notes. The palate mirrors the nose with orchard fruit, citrus, quince, pineapple, rock candy sweetness and an herbal anise/mint note. The balanced finish sees fruit persisting with the discreet sweetness suggesting pairings like terrine, rillettes or shrimp over oysters.
